This easy baked chicken parmesan recipe is one of my new favorites! I can throw it together in just a few minutes when I get home from work, then put it in the oven to bake while I get other household chores out of the way. For example, I like to start washing dishes at the same time that I’m starting dinner so most of the dishes are out of the way by the time we eat. That makes for a quick cleanup after dinner, and then extra relaxation time for me in the evening!

Ingredients
- About 2 pounds of boneless, skinless chicken breasts, halved
- 1 egg, beaten
- ½ cup Italian bread crumbs
- 1 jar marinara sauce
- 1 cup shredded mozzarella cheese
Instructions
Pre-heat oven to 400 degrees. Spray a large casserole dish with cooking spray. Dip chicken into egg mixture, then into bread crumbs. Turn to coat. Add chicken to baking dish. Bake for about 20 minutes. Pour a jar of your favorite marinara sauce over the chicken. Sprinkle with mozzarella cheese. Return to the oven and bake an additional ten minutes. For a crispy top, turn the broiler on for a minute or two before removing from the oven.
You may serve your chicken parmesan with pasta, but no one in my family really likes pasta, so we just eat ours with garlic toast. I just slab some butter on several slices of bread, sprinkle some garlic salt on the butter, and throw it on a cookie sheet under the broiler until the top of the bread is toasted. Yum! |
