Ingredients
Salt and pepper to taste
1 tbsp cooking oil
2 ½ cups of water
1 cup of rice
1 can of Campbell’s condensed cheddar cheese soup
1 can of chopped tomatoes and peppers
1 cup of shredded cheddar cheese
Optional add-in ideas
1 can of drained corn
1 can of drained black beans
Any other items you think your family would enjoy that will bulk up this hearty meal
Directions
While pork chops brown, mix all other ingredients, except the shredded cheddar cheese, in a 13x9 in. baking dish. Once pork chops are browned, place them in a single layer on top of the mixture in the baking dish. Place in oven and bake for 1 hour.
Sprinkle shredded cheddar cheese on top of the casserole and bake for an additional 5 minutes until the cheese is melty and the rice has soaked up the majority of the liquid.
